Biga, family owned and operated, opened in 2011 as a gathering place for families and friends, a place to meet and relax, enjoy one another’s company while experiencing authentic wood fired pizza. Located across the street from Kirtland High School in beautiful Kirtland, Ohio, the old Caesar’s Pizza was renovated and transformed into a warm and cozy wood fired pizzeria. Along with the full menu of pizzas, salads, seasonal appetizers, and deserts made by Grandma Jane, we also serve local and Italian beer, and wines specially chosen to support small, family owned and operated wineries from Ohio, Italy and around the world.

Got Wood?

The oven at Biga – nicknamed “Woodie,” comes from Wood Stone in Washington State. We burn oak, cherry and apple woods that are locally harvested and seasoned. The fire itself is more than just a means to cook. For centuries fire has served as a focal point of gatherings. Whether the source of energy was to provide warmth, comfort, conversation, or food, it brought people together.

Fresh, Local Ingredients

At Biga, we buy fresh local produce in season and have partnered with some truly amazing farmers in our area. The beautiful, living greens for our salads come from Great Lakes Growers in Burton, Ohio. Our seasonal fruits and vegetables are grown by Larry and Tina at Rainbow Farms. Because we only use local produce when it is in season, our menu changes often as these items become available.

What is Biga?

Biga (pronounced bee-gah) is Italian for a “dough starter.” Italian breads and baked goods are world renowned because of their use of a “biga.” A “biga” or “starter” is a living thing made from flour, water and naturally occurring wild yeast. A biga must be fed on a regular basis to stay alive; it feeds on flour and requires water or it will die. The older the starter gets, the more flavor it imparts into the dough. Our starter was born in 1999 and has a distinct flavor of North East Ohio because of the wild yeasts in the air found only in this area. Our pizza and breads are made each day by adding a portion of this starter, and it is what gives our dough its unique flavor and characteristic.
